I have always been using default ztop=2000 in a real case simulation. I'm not sure if is wrong or not.
I read that in real cases it is recommended to use p_top_requested instead, which value would be acceptable for a real case in Central America?
ztop is used for ideal cases. For real-data cases, p_top_requested is the variable you should use.
if you are studying processes in the troposphere, then I suppose that p_top = 5000 or 3000 should be fine.
